Encona 'Buttilicious' Bacon Butty

20 rashers of thick cut streaky smoked bacon
4 Floury white baps
A handful of cherry tomatoes on the vine
A twist of black pepper to season
1) Brush and glaze the streaky bacon with the Encona Jamaican Jerk BBQ Sauce before grilling until golden and crisp.
2) Heat a sauté pan with a dash of olive oil and a splash of the Encona Jamaican Jerk BBQ Sauce, add the tomatoes and season well. Cook for four to five minutes, until they start to soften.
3) Serve the bacon in floury baps with sautéed cherry tomatoes and a little extra splash of the sauce.
